This delicious aush is usually served in a celebration for a baby that his/her first tooth has extracted. Because of this they also call it “Dandani aush” too; Dandan means tooth in Persian. The ingredients of this traditional aush are: Wheat, peas, milk, walnut kernels, pistachio and almond slices, raisins and animal oil. To prepare the dish, they soak the wheat for a few days before cooking, first in water and then in milk. After soaking the wheat, they cook it well and then add the soaked raisins and decorate it with other ingredients such as sliced almonds and pistachios.
The name of this traditional aush of Tabriz is due to the fact that the use earring-shaped doughs in it! This dish, like any other Tabrizi local food, is very nutritious. To cook this dish, Tabrizis prepare the dough themselves. The ingredients of the dough, are eggs, flour and water. They fill these doughs with meat and then close them in the shape of earrings. There is no news of beans in this dish! because in the end, these earring doughs are supposed to be cooked in water and tomato juice.

Omaj aush is also useful for those who catch bad colds in winter. Omaj is actually a dried dough made from a combination of water and flour. To cook the dish, they first to cook the lentils, onions and vegetables thoroughly with the water, and finally add the omajs to the pot.
This dish is cooked exclusively in East Azerbaijan and belongs to the people of this province. Ice aush is prepared from a combination of ingredients such as sour yogurt, ice, rice, garlic and vegetables such as leeks, coriander and beet leaves. To cook this aush, they first cook the soaked rice with vegetables and when the aush turns into rice milk, it’s time for grating the garlic in it and remove it from the flame. After cooking, they place the aush in the refrigerator and when it’s cold, you can have it with some ice in the bowl.
This aush, is one of the most popular local dishes of Tabriz. The main ingredients of this aush are: Verjuice, wheat semolina, cowpea beans and lentils. Instead of using verjuice, you can also use fresh sour grape too. The sour grape and verjuice have many properties such as quenching thirst, eliminating bile and lowering blood sugar and cholesterol for the body. The vegetables used in this dish are mostly leeks and parsley; but any chef can add vegetable of their taste to their pot. Mint and coriander are the most popular additional vegetables in this traditional aush of Tabriz.
This delicious aush is very popular in winter and because it does not have bulky beans in it, it is among the light foods and you can have it any time of the day. The ingredients of yoghurt aush are: lentils, potatoes, stir-fried meat, rice and yogurt. There are two ways of serving this dish: Some boil the yoghurt with other ingredients and some others put it alongside the aush and you can add as much as you want based on your taste.
